Meal Prep 1:

Breakfast burritos

 

1 package of chopped kale

1 clove of garlic

1 tablespoon of coconut oil

Salt and pepper

6 tortillas (we used flour tortillas)

1 dozen eggs

 

Cooking instructions:

Heat a skillet over medium high heat, then add coconut oil. Add the package of kale and cook until wilted (usually 4-5 minutes). Add minced garlic and cook about a minute. Add salt and pepper to taste. In a separate bowl, crack eggs and whisk. Add eggs to the pan and lower heat to low. Stir frequently until eggs are cook through. Remove from heat. Take tortillas and warm for 30 seconds to a minute in the microwave. Once warmed, take tortilla and fill with eggs and roll it up. Wrap all burritos in plastic wrap.

  • we make variations of these all the time. Add cheese, salsa, sausage/bacon, or leftover veggies/meat.

Italian Sausages and Veggies

6 hot Italian chicken sausages

6 cups of chopped broccoli (Costco)

4 large sweet potatoes (chopped)

2 packages of Trader Joes frozen rice medley

Trader Joes coconut oil spray

Trader Joes 21 seasoning salute

 

Cooking directions:

Preheat oven to 400 degrees. Put sweet potatoes on coconut oil greased baking sheet and sprinkle liberally with 21 seasonal salute. Cook for 30-40 minutes until crispy on the outside and cooked through. While sweet potatoes are cooking, take a large skillet and heat over medium high heat. Add sliced Italian sausage and cook for 7-10 minutes. Add broccoli when the sausage is almost throughly cooked. Cook bags of frozen rice in microwave for 2 minutes. When everything is cooked separate into your containers.
